Ultimate Mutton Curry
Dad joke alert:
What do you call a sheep who knows karate? A mutton chop.
Ok, enough baa-ad jokes, on to the yum.
Mutton curry is savoury, delicious and so yummy that it satisfies everyone. Yes, really, Doesn’t matter if you love hot ‘n spicy or mild and flavoursome, this curry makes everyone happy.
What you need:
2.2 kg mutton
2 cinnamon sticks
5 cloves
4 star anise
5 bay leaves
4 onions
2.5 tablespoons of garlic & ginger paste
1 tablespoon each - cumin powder, turmeric, dried coriander
2 curry leaf stems
4 tablespoons of mutton masala
4 chopped tomatoes
1 can of chopped tomatoes with garlic
What to do:
Warm a cast iron or potjie pot over the fire. (or on a stove top, you can finish the dish in the oven)
Add a decent glug of oil
Stir in the cinnamon sticks, star anise, cloves and bay leaves
Cook and stir for 2 minutes, and add in the chopped onions
Once it softens, add in the coriander, cumin and turmeric
Then add the curry leaves and garlic and ginger paste and stir
Cook for 2 minutes and add the masala nad chilli powder. Stir
Stir in the chopped tomatoes
Things are starting to look saucy! Pop the lid on and let it simmer for 20 mins
Stir the mutton through replace the lid and keep going for another 30 mins
Time for another stir. Check seasoning and add salt if needed
Lid back on and cook for another 30 mins
Yes, it takes time, but it’s totally worth it. Wasn’t that smell delicious? Getting hungry? Me too!
Stir the potatoes through
Replace lid, keep going for another 25 mins
Check if the potatoes are soft - when they’re done, your curry is ready!
Enjoy with rice, rotis or flatbreads, salad, adjust a huge, heaping helping in a bowl!
