Smoked Apple-Stuffed Bacon-Wrapped Pork!

Dad joke alert:

What do you call an upscale restaurant that specializes in pork? Swine dining. 

Ok, ok, time to be serious...What does smoking cure? Pork. 

And it does it beautifully. This recipe is the perfect combination of succulent, juicy pork with an apple pie heart, wrapped in bacon. Mmm... bacon.

Wipe the drool off, and let's get cooking!

What you need:

2 pork fillets

Streaky bacon - enough to cover your fillets

3 apples

Brown sugar

Cinnamon

Butter

BBq/Braai spice. This is usually a mixture with pepper, salt, chilli, garlic, onion etc. This is up to your tastebuds, use your favourite spicy sprinkle

Your favourite smokey BBQ/braai sauce

What to do:

Peel and core your apples, then chop into cubes.

Melt some butter in a pan, and add the cubes.

Add in sugar and cinnamon to your tastes. This is important - it must taste like apple pie. Not giving amounts because everyone has a different view on how sweet/cinnamony this should be.

Put your apple mixture in a bowl and set aside.

Cut a slit into your fillets, all the way down the top. (Leave the ends intact)

Fill with your apple mixture. Be generous, but make sure you have enough bacon to lovingly wrap it all up

Wrap your stuffed pork with bacon. Overlap each rasher slightly, and make sure your filling is covered well.

Sprinkle your spices over the top

Pop into the smoker at 110*C for 90 minutes.

Prepare your tastebuds for a serious treat!

Rest the meat for about 10 minutes, slice and enjoy!
