Why is ground pork so popular?
Because flying pigs are hard to catch!
There are times when you want something quick, tasty and fuss-free. This recipe is exactly that. The longest prep is chopping the onion.
What you need:
As many wraps as eaters
Pork mince
Seasoning - onion powder, dried oreganum, thyme, and smoked paprika - all to taste ( I used about a tablespoon of each)
Thinly sliced red onion
Grated cheese (cheddar works very well)
Chopped fresh parsley
Braai sauce to drizzle
What to do:
Slice onions, grate cheese, chop parsley
Season the pork mince and mix thoroughly
I cooked these on the gas braai, so I painted a thin layer of olive oil on the griddle, popped it on the braai to heat up
Two middle burners on high, side burners off
Pro Tip - pop a piece of onion on the griddle to check when it's hot enough, the onion will sizzle
Smear a thin layer of mince onto a wrap and put meat side down on the hot griddle
Cook for about 3 minutes or until the mince is cooked
Turn over and cook for 2 minutes, remove
Drizzle the braai sauce and scatter some onion slices over
Top with cheese and parsley
I fold mine in half, the Resident Teen sandwiches 2 together and cuts it like a quesadilla, the Mrs eats hers open and flat. Pick your favourite way
Chomp and enjoy!

Notes:
I used rotis for my wrap, but you can use wraps, rotis or any flatbread you prefer.
If you can't find pork mince, use the insides from pork sausages
You can do these on a normal braai with a griddle pan, or on the stove top with a frying pan
With a side salad, these make a great, light meal
