Pap 'n Wors
Dad joke alert:
I wanted to tell a wors joke, but it was the wurst.
All South Africans know mielie pap. But have you ever had it as a seriously tasty side dish on its own?
This is an upgraded paptert that everyone will love. Meaty wors, smooth pap, cheesy goodness, and the savoury kiss from the tomato mixture - something for everyone!
What you need:
1.5 litres of water
3 cups of maize meal (pap)
1 tablespoon each of salt and butter
2 cups of grated cheddar
2 onions, sliced
700g of boerewors (or replace with your fave sausage)
1 tin of chopped tomato and onions
What to do:
In a pot, add the water and salt and stir over medium heat.
Add the maize meal, and keep stirring until thickened. (about 5 mins)
Put the lid on and cook on low heat for 30 mins.
(The pap must be thick an smooth, like mash)
Stir the butter through.
Stir half of the grated cheddar through.
Take off the heat and have a sneaky taste.
In a pan, fry the onions in a drizzle of oil until soft
Braai the wors until cooked
This can also be done in a frying pan or in the oven if preferred
I used a spring-form pan to construct my paptert, but you can use any dish that will work
Place half the pap mixture into the base of the pan, and spread evenly all over the base, and up the sides
Spread the onions over the bottom
Add half the tin of chopped tomato and onions
Add the wors in a single layer and top with the last half of the tomato/onion tin
Cover with the last half of the grated cheese
Top with the remaining pap and spread to cover
Bake at 180*C for 30 mins in the oven or gas braai
Rest for 10 mins and use a butter knife to loosen your paptert's edges
