Easy Pickled Snoek

Why do people love pickled things?
Because they're dill-licious!
It's Easter time - and pickled fish is the traditional dish served up. My recipe is easy, quick and very, very yummy.
What you need:
1.5 kg snoek, cut into handy serving size pieces
1 x box of Helderberg Spice's Pickled Fish seasoning. No, I'm n ot sponsored by them, just love the product
2 x onions, sliced into thin rings
Salt to season
2 x tablespoons of crushed garlic
120 ml of water
500ml of dark vinegar
110g brown sugar
What to do:
Pat the fish dry, and season with salt
Fry the fish, about 4-5 minutes per side, depending on thickness (basically until just cooked)
Sauté the onions until almost soft, they must still have a bit of crunch
Add the garlic, stir through
Mix in the small sachet from the Pickled Fish seasoning
Add the water and vinegar
Bring to the boil, add in brown sugar, stir until dissolved
Mix in the large sachet from the Pickled Fish seasoning
Simmer for 10 minutes
Put in 1/3 of the sauce into a glass bowl, top with a layer of fish
Repeat the layers, ending on a sauce layer
Cover and refrigerate for 48 hours
Serve with hard-boiled eggs, and crusty bread to mop up the sauce
Score: 9/10 golden spatulas - definitely a winner
