Baked Egg Cups

Dad joke alert:

How do you make an egg roll?

Just give it a little push!


In my never-ending quest for a delicious breakfast, I have found these little delights. All done in a muffin tray, so less to clean up!

Quick, easy, and perfect for breakfast. Add in some salad and it could be brunch too.


What you need:

As many eggs as eaters - or 2 each in my case

Ham slices for each egg

Salt and pepper to season

Grated cheddar - enough to generously cover the egg cups

What to do:

Spray the muffin tray with cooking spray.

Line with ham slices, pushing down into the cup so it can hold the egg mixture.

Gently crack an egg into the ham cups.

(This is definitely easier if you crack them into a bowl first. Then you don’t have to fish bits of shell out…)

Season with salt and pepper

Top each cup with lots of grated cheese

Pop into the oven at 180*C for 15-20 mins

That’s it! Chomp and enjoy!
